Removing & replacing some synthetic chemicals in food is unlikely to make a dent in rising rates of chronic diseases. There's also so much we have yet to understand about how the food environment sickens us. Without careful science, we're left hand-waving about hunches.

New oped alert: Lax regulation of food additives is a real problem serious people worry about. But let's not lose sight of the big picture. Junk food is cheap, ubiquitous, and heavily advertised, while healthy food, relatively hard to come by.
