Over grazing land will expose the farm to weather variability. Tall plants = deep roots, making space for air and water in the soil. Tall plants, even after trampling by the beef cattle, shield soil from the heat of the sun. They also capture more sunlight, speeding regrowth.

About 70% of the UK's drinking water comes from upland catchments — so we need to make them more drought-resilient. Restoring peat bogs and clough woodlands can slow the release of water into reservoirs, playing an important part in stabilising supplies.
