Yes, I am really enjoying my combustion thermometer that Chris created. I think it is the best of the wireless probes.
@meathead Now talk about his Combustion thermometers ... I'm REALLY pleased with mine!

I complained about the screen not working on Twitter (the thermometer is working, they are already sending a replacement screen) this just made the best tri tip I've ever had. I'm a convert. It revealed my smoker was 40 degrees cooler than I thought. https://t.co/3yTScsu1Fr

I was nervous when I heard @WIRED was reviewing the @IncCombustion Predictive Thermometer. Joe Ray is tough on kitchen tech, so Iām delighted to learn he liked our Predictive Thermometer, giving it 9/10:

Weāre told that no Predictive Thermometers were harmed in making this video.
Quite a few folks wondering how we created shots like this for my latest YouTube video on the science of searing. The techniques are similar to what we did at Modernist Cuisine, but a bit more challenging because itās video⦠š§µ

While @ChefChrisYoung has been gorging himself on Slurpees, the team has been BUSY. There's a big software update coming next week that will improve the performance of the Predictive Thermometer and other Combustion Tools. Keep an eye open for that.
In my latest video, I indulge my childhood nostalgia for the 7-Eleven Slurpee and provide a recipe for turning any ordinary soda into a real frozen and fizzy Slurpee in your freezer with a few ingredients you can get from Amazon:

Something that often surprises people is how much cooking happens after you take things off the heat. A simple pan-roast salmon can go up another 30F! This is definitely not intuitive. Machine learning with lots of sensors is going to be much better at this than even the most

Grill masters: Yes we know it should be a two-zone fire for beefy steaks like these, but it just doesnāt make for as cool photo. Appreciate you putting the pitchfork and torches away for now. š
Revisiting the cutaways of Modernist Cuisine after a 10+ year break. This time for @IncCombustion. Forgot how fun it is to combine machine tools with cooking. What should I cut next?

Today's video looks at the culinary myth that searing seals in the juices. I knew all the reasons itās a myth. But it turns out that maybe itās true? So I conducted and experiment that I donāt think has been done before, and the result was
