In other news today, we’re launching our 2nd generation Predictive Thermometer. What’s new? 900F max temp, WiFi enabled, hermetic seal, and a bunch of other nice upgrades—including a new Combustion Engine for the Giant Grill Gauge. It’s a lot! More here:

Super fun little iOS app from @JustMeDevin. I’m old enough to remember not needing an app for home movies to look like this.

I’ve been thinking a lot about these tariffs, and I think we’re probably watching a massive debt restructuring unfold. Imagine a business that’s borrowed far too much money. Its first move would be simple: cut spending fast, wherever it has direct control—because waiting for.

This is an incredibly well articulated set of challenges around our road ahead. My experience with manufacturing in USA, China, and Vietnam is the same. And the infrastructure challenges are, if anything, underplayed in this summary.

Stock extraction actually happens in two phases:. 1️⃣ Fast extraction: from meat and connective tissues. 2️⃣ Slow extraction: minerals dissolving, freeing bone collagen. Most stocks aren't cooked long enough to benefit from phase two. But there are some ways to accelerate this.

22 years after developing our stock recipes at The Fat Duck, I'm revisiting some of my oldest cooking experiments—and discovering new surprises. Did you know stock extraction actually has two distinct stages?
