Rushing to get this out, but my #1 Thanksgiving hack: keep extra stock simmering on the back-burner. Hit every dish with it as you cook. Flavor goes up, dryness goes down, even those "reheat" items.

Reduce it down into a very concentrated "glace". It will cool like gelatin, then freeze it. When you need it you can just add to a pot with water and BAM you have your stock back.
@ChefGruel Any tips on storing the leftover stock? Like if I just put it in a mason jar and throw it in the fridge will it last a while?
