I’ve been revisiting Maulana Ashraf Ali Thanawi’s Bihishti Zewar today for its recipes and injunctions on food. A recipe for Nauratan Chutney in which the mango is richly flavoured with garlic, ginger, red chilli, kalonji, aniseed, dried mint, cloves and nutmeg stood out!

Trialling more recipes from our upcoming historic Rampur cookbook - that I’m working on with @DrTarana. These raw, or green, banana kababs were a revelation… perfect texture, excellent flavour. Made them for an evening get-together with friends and they disappeared in minutes!
