I would suggest paying booking amount via CC as well and that gives you time to see if rewards are coming, you can also check with your card company for the MCC and validate if its not any exempted category.

An update on not being able to redeem points yesterday.
Representative from ITC Grand Bharat reached out and offered to debit the points today and refund the card amount back to original source.

They have one of the worst customer support, ethics, policies and processes BUT those reward rates are juicy for sure, unmatched by any bank out there!

Usually there are two ways to pay insurance premium via amazon pay,
1) Via Amazon pay portal, you have to provide policy id etc
2) Pay via insurance website, and they have razor pay payment gateway, which has option to use amazon pay.
