Grief @thisismadremcr was fantastic last night, and rightfully packed to the gunnels. Though at least I got a table, last week I was turned away on a *Mon* night as they were booked solid. This isn't just 'new opening'-itis, they're on to something here. It's the whole package.

The cooking was punchy but well balanced, zingingly bright in colours and flavours, and culminated over the parilla wood-fired grill. That huge bowl of rib beef, roasted, rested, and served sliced on a pile of scorched jalapeños, onion rings and beef jus roasties, was a banger.

Oh Madre, I think you are going to be *special*. The food at yesterday's press lunch was excellent, pitching well above a mere one-trick taqueria, and the whole dining experience was a feast for both eyes and belly. Proper 360° hospitality.

After seeing @KungFuBBQ cook Porter Braised Beef Short-Rib & Burnt Spring Onion Crema from the @breddostacos book I had to give it a go. The ribs were smoked with until they hit 160F, then braised to 208F. Reduced the braise to create a glaze. What a recipe and Monday dinner!

One of my favourite recipes from the @breddostacos book - Porter braised Short Rib & Burnt Spring Onion Crema The ribs were seared first then cooked slowly for a long time on the Smokefire. Just a glorious meal, so good!
