Ethiopian Christmas is coming up in a few days so I wanted to share a recipe for one of the dishes that is always on the menu for big holidays. Kitfo is a beef tartare – a specialty of the Gurage people, @MayaMayahaile’s tribe in Southwestern Ethiopia.
