For any given commandment in the Law of Moses, we must do one of the following: (1) plausibly explain how Jesus permanently fulfilled it (2) show how in the New Covenant we keep it in a transformed but substantive way (3) literally just do it There is no (4) just ignore.

What you said is both historically and biblically incorrect. The Apostles, and even Yeshua Himself never stopped being Jews. Christianity was never the “faith once delivered to the saints” (Jude 1:3). It was a later Roman rebranding that blended pagan traditions with the gospel,

The apostles never put themselves above Scripture, they always appealed to it. That’s the whole pattern of the New Testament. In Acts 15 they didn’t say “we decide by our authority.” James quoted Amos 9 to prove the decision lined up with TaNaKh. Even the council itself leaned
