If there’s one kitchen skill you learn this year please let it be how to joint a chicken. €17.60/kg for breasts or €3.74/kg for a whole one. There’s a load of tutorial videos on YouTube to help. I’d love to see some cookery programmes return to demoing these basic skills

I have been deeply affected by the murder of those two men in Sligo. My heart goes out to their families and friends. Following on from an horrific homophobic attack in Dublin at the weekend it shows we always have work to do to dismantle hate. My spirit is a little flattened.
It took me 4 days to put up that tree. This year my mam was diagnosed with dementia and is now in a nursing home. Recently my dad was diagnosed with cancer. I don’t share looking for pity but the end visible result & effort are not always comparable. Consider everyone’s struggle.
I won’t share it in the case of inadvertently promoting it but a Galway restaurant has started a gofundme to launch a legal challenge against the vaccine pass. They can be safe in the knowledge that I shall not darken their door again.

Does anything hit as well on the comfort scale when you want minimal effort as much as spaghetti carbonara? Eggs, pecorino & Parmesan, pancetta (traditionally guanciale) and pasta water combine for this beauty. I served with a Godello, not perfect but very good!

All from the freezer, fridge and pantry. Ling loin from the freezer, wrapped in Serrano ham pan fried and roasted for a 10 minutes in the oven. Served with a pouch of lentils, loosened with stock, a dollop of dijon mustard, splash of wine with some rocket stirred through.

What’s your go to “I’m cooking but not exerting myself” meal? I’ve found recently I’m often veered towards a simple tomato sauce. Sweat an onion for a few in EVOO, add some garlic, good quality tins of tomatoes, a splash of the bottle I have open if I do, and let bubble away.
