3 slabs were cured in salt, pepper, brown sugar, and curing salt. 1 slab was just those ingredients, 1 had added maple syrup, and one with added honey. The thick bacon makes it hard to cook evenly bc the sugar burns before the bacon crisps up.

Lesson learned, if you make 9 lbs of bacon, you really need a meet slicer. I had to cut it thicker than preferred and it took over an hour. Very happy with the outcome.

Something new, after 8 days of curing, I smoked some bacon today on the Traeger. Each slab is 3 pounds seasoned with salt, pepper, and brown sugar except the one has been curing with honey and one with maple syrup. Pretty excited for the morning!

Nobody asked, but my take is that the @AtlantaFalcons finished the season exactly as they planned. When they decided to have two QBs and prioritize not wanting to be bad versus wanting to be great, they made the choice to deprioritize elsewhere. Result, 8-9, no playoffs.
