Milk ๐Ÿฅ›is a fascinating material for food physicists. @liahrne has used SAXS to study casein micelles. At differing concentrations, they vary from โ€œhairyโ€, to smooth and then form rod-shaped aggregates, which influences the viscosity. #IOPFoodPhysics2021
