A year later and the media fawning has gotten even worse than I thought it would. The tribune is especially ridiculous. Kessler, please get there soon so people can have some idea of what’s actually going on.

Absolutely, 100% wrong. This kind of attention-sucking, space consuming, temperature-sensitive, a la minute cooking is the antithesis of what belongs on your the Thanksgiving menu. Do not make this. Do not even think about making this.

Gotta laugh at the fact that for all the free advertising Calli got from traditional media sheep by giving invites for free meals and access, they mustered only 2 Yelp reviews in their entire life span before closing. Guess that clears up where real influence lives.

The Avondale restaurant bets big on techy sous vide, but where the restaurant shines is with its old-fashioned hospitality.
The smoque guys have been super nice, generous members of the food scene for years, so they deserve all of the free advertising and uncritical praise they are sure to get from local media as they open the new place. I’m thankful there’s Kessler to confirm one way or the other.

The newfangled places hopping on the smash burger bandwagon rarely get the crispy edges crispy enough. Not even close to the audible crunch at the Midwest classic place I just tried for the first time. Find kennetha222 in threads for the reveal.
