Been to some top 50 restaurants where the service feels almost clinical, not genuine, maybe coz they knew it’s a bucket list place so in all probability I wasn’t returning. I think it’s more challenging to be a restaurant that people (likely locals) want to return to repeatedly.
The Taste: The rise of gastrotourism.Many of the world’s so-called Best restaurants no longer cater to locals,their own communities or foodies.They are filled with gastrotourists who come to post pictures on Instagram & to brag to their friends back home.

I've maintained for years that you can't "Eat Badly in India". & in the past several years I've eaten at the best Michelin star restaurants in Europe & Asia. But "The Table" in Colaba, Bombay, beats all of them hands down. It's the best restaurant I've eaten at, bar none. Try
