also many creatures in nature have "stopped" evolution millions or even hundreds of millions of years ago such as dragonfly, lizard, turtle etc. so perhaps things will stop substantial change in forms when they hit the limit set by physics or the law of nature.
I used to wonder the same thing, but perhaps aviation has been evolving perhaps just in a more subtle way in less distinctive aspects such as fuel efficiency, overall cost, safety, cabin comfort, even the booking system (very important element) so that more people can take ride.

Only 66 years from first flight to landing on the Moon in 1969. Here we are, 76 years later cannot yet return to the Moon. We should have been on Mars by now.
