Maybe skill issue, but after building graphql servers with proper frameworks for years (nexus/type-graphq/nest/pothos) having to work with AppSync now feels like I need to unlearn everything. DX is awful.

Not throwing shade at this person, but I think FE devs need to be exposed to servers more. Real world applications start with a server and get a frontend, not the other way around.

This is not a React "Hello World". This is a Next.js "Hello World", with a problem you only get using that framework. You want a React "Hello World"? . Use @vite_js. npm create vite@latest. Or @remix_run . npx create-remix@latest. Or @astrodotbuild + React.
