Memorable tacos at Don Chuy here in Sinaloa. This one made by 82 year old Don Chuy himself. A taco combinado of the only three tacos they offer- cabeza, chicharrón y frijoles con chorizo. The menu really doesn’t need anything else.

Ask me what we eat most at home and I'll say without batting an eye: soft, earthy, black beans. We make them at least 2-3 times a week to eat solo or as a side for eggs, enchiladas, tacos. Options are endless and always nurturing and filling.

As you make homemade corn tortillas and they puff, you can make a little hole and pour in a freshly cracked egg. Then return it to your comal or pan and let the egg cook inside. It’s not an egg in a hole, but an egg in a puff!

I just realized that every time I leave Mexico, I find myself with a giant Oreja on the plane. I go crazy over it. Made w enough sugar, baked until not only it caramelizes but has parts that brown to almost burnt. So delicious and crunchy and sweet, but uneven at every bite
