🎶 It's a long way to Dublin city, 🎶 It's a long way to go. 🎶 This beer's brewed in Tipperary, 🎶 Not that you'd fucking know 😡

The bonus of buying fresh barrels is that sometimes you get a little wine left inside #lovekillarney #provenance

Here's a good test case. We are happy to be sued by 300 people, mostly from #Chicago (including a billionaire), who want exclusive use of the word Killarney for whisky and other products. A good public interest question. Check back for our defence in due course.

Provenance is important, especially for whisky. Is it ok to use a placename if you don't make whisky there? Is it right to trademark well known placenames? We say no. Placenames are cultural heritage.

Floor malted barley going through our grain dryer. Slowly dropping moisture from 43% to around 14% for brewing. All done in house #killarneywhisky #lovekillarney

A great #Harvest2021 yesterday evening at Gortroe about 1 km from Killarney town. Limestone land at about 40m asl. We will store, malt, brew and distill this grain separately. Then compare with spirit from same seed batch grown 2021 on other local #terroirs. #provenance

Barley #Harvest2021 completed yesterday evening at Knockacullig South, overlooking Killarney. This field on shale at 235m altitude. We'll compare spirit from this field with spirit from same seed batch grown on limestone close to Killarney at 200m lower altitude. #terroir

Square bales too. Really light due to being so dry.

A fine range of local vintage combines for our barley harvest on the land of Liam Fleming at Grenagh, Fossa today. What a day for harvesting grain.

Lovely growing weather during the week for our barley on limestone at Gortroe, east of Killarney. And a drop of rain today. All good!
