Update: I made this late on Christmas Eve, but set the oven at the wrong temperature. The top was scorched. Obviously I just sliced the top off and turned the whole thing upside down before serving it.
Tonight I plan to bake this again. It's a nice cut-and-come-again cake for over the Christmas period, and the added pineapple calls to my Filipino side. Count the number of times Mary coughs. Vintage telly:
