Crackers are a scam. I just made probably $40 worth of crackers with 2 cups flour and some waste chicken fat we would have thrown away otherwise. How many people know this? Crackers are easy to make, much easier than bread.

I had no idea about this. In 1910, Manhattan's population was ~2,300,000. In 2025, it's ~1,600,000. That's a 30% drop. Average rent in LES in 1910 was $10-13/mo, or in 2025 dollars, about $430/mo. Today median rent in LES is $5,398. Fascinating economics...
