The waiter in AMALFI scolded me when I asked for parmigiana cheese on top. This part of Italy’s Coast is famous for their spaghetti Vongole. He said the cheese soaks up the juice while you need the el dente pasta to do that. So I trusted the expert and I’m glad I did
