Merry Christmas! I’m celebrating by making a recipe that’s dear to my heart: my grandma’s spaghetti and meatballs. She came to the U.S. through Ellis Island when she was very little. This was the number 1 meal I looked forward to every single year. Here’s my version.

So my big update is that my private chef business is officially up and running again (but now in Texas, not California). I’m already booked out for the first few months of 2025. I’m super excited to meet more clients and create amazing culinary experiences for them here in Texas

I’ve been busy running restaurants, learning Michelin level bbq and was hired as head chef to launch a first of its kind restaurant in a luxury fitness club. I’ve even worked in fast food as one of my mentors, Darina Allen, suggested during culinary school. It’s been incredible!

In 2019, after working in a four diamond banquet kitchen and a world famous Asian restaurant, I started my private chef business in California and ran it for 4 years. Since relocating to Texas a few years back

It’s been life changing ever since. I’m extremely grateful and blessed to be able to pursue my dreams. It’s been harder than I could have ever imagined, but my smile is true. Cooking is my purpose and it’s what I love to do.

It’s been 6 years since I decided to follow my childhood dream of becoming a chef. In 2018, My wife and I sold everything, quit our jobs and moved to Ireland for me to take the first step. Attending Ballymaloe Cookery School was the best choice I could have made.
