the thing about GRRM's writing is that these kinds of things often aren't actually that ambiguous, they just haven't had the Big Reveal yet. Dunk's status is about as ambiguous as R+L=J, and many of his inner thoughts don't make any sense if he wasn't lying about being a knight.
Whether Dunk was knighted is supposed to be ambiguous but the idea he "doesn't know the words" doesn't make sense. He's been around knights and squires his whole life and he knows - and says aloud - what knights' responsibilities are. He would have heard of the words and seen it
