📝How to warm up Sake:. Use a hot-water : .1. Heat water to ~50–60°C.2. Place the mug with Sake in the water, and remove when the sake reaches your target. 🚨 Never boil or microwave.

Tasting tip: pour one bottle into three or four small cups and try it across 2–3 temps. Feel the difference even with the same Sake!. Why it matters: colder temps preserve fragile aromatics; warmer temps release amino-acid driven umami and create a broader mouthfeel. Small temp.

In 2020, Kitsukura reclaimed small rice plots near the brewery where they began cultivating two rice varieties, Miyama Nishiki and Kinmon Nishiki, that are native to Nagano under the guidance of Akinori Ide, a fifth-generation farmer.
