You can’t rehydrate steel. It cannot absorb or “lose” water. You can remove mineral scale and make it more resistant to fingerprints or polish it but the word “rehydrate” is a a marketing lie probably to sell you stainless steel sinks and/or cleaning products.
You need to do basic maintenance work if you expect to get the best performance from your kitchen systems.
