A kiritsuke has much less steel behind the tip making them a perfect tool for dicing small things. . A veggie I really enjoy chopping up with my kiritsuke gyuto is garlic. I can get a nice fine dice, ensuring the garlic easily melts and incorporates into whatever I’m cooking.

Geometry matters pt 3. The less steel there is behind the edge, the less resistance we encounter. This knife is what we would consider “laser thin” and it has a fairly toothy factory edge. Because of this, we can do these no-handed potato slices. .
