Ok, some giant utility up north, Minnesota or thereabouts decides to take a coal fired plant offline and replace it with a solar farm.
How do they produce electricity at night?
How do the produce electricity when all the solar panels are buried under six feet of snow?

They don't.
They have one of their engineers sit down and run the numbers for how much they are producing vs how much they are short.
Then they try to make up the shortfall by telling you to use less heat and not charge your electric car at night.

Ask Alberta. The former premier Rachel Notley, or as we call her Chief Notaclue, did just that! No they are buying power from other producers

Gets worse. Solar farms often use molten salt to store thermal energy, later used to heat water for STEAM TURBINES to generate electricity! Further, solar plants need A LOT OF fossil fuels to start up every morning & to lubricate & FABRICATE almost everything in the system.

Networks of environmentally destructive transmission lines snaking their way through National Parks, designated Wilderness Areas, and any place they damn well choose to slither through. These transmission lines will allegedly bring power from the destroyed southern deserts.

What makes you think anyone cared? That's not the point.
The point of these things is to make themselves feel superior, powerful, in control, and a dozen other things that are all related. It's all about their feelings. Reality is not involved.
