I never use Twitter to actually tweet (mostly just to follow all things CLE) but just want to put my hand up as one of many downtown residents/workers who love this city for everything it is, in spite of everything it isn’t, and for everything it has the potential to become. 💙
As someone who lives in Downtown, works in Downtown, and puts my time, effort, and energy into trying to make Downtown the best place it can be, I feel like I needed to share my honest perspective on this
YES, it has challenges. But here’s my 🧵 on why Downtown is NOT dead.

Thank you!! Too long haha 😅 Between designing the template, making and cutting out the dough, doing some tests, and actual assembly, I think it took between 30-40 hours...I'm not a professional so speed isn't my strong suit!

I designed the template in Adobe Illustrator, then printed and cut that out of paper and laid it on top of chilled dough, using a pin to punch through the paper to mark window placement. Hogwarts has a LOT of detail and round parts though, that's ambitious even for me 😅

The baked cookie in this recipe also gets pretty hard so you can grate down the edges as needed to get them to line up! Def took some trial and error!

I left a ~2cm border around each piece that I cut out, then chilled again, then baked and trimmed off that border right after pulling out of the oven before the cookie has a chance to harden. I think the chilling + border helps keep the dough from losing shape/spreading.
