Latinos in LatAm countries have more nuance regarding Spain. Almost all of them are part Spanish. The urban centers are basically the colonial core with nice churches and plazas, and those are major points of pride. AOC’s wokeness is a testament to her assimilation to the US.

Gentrification is caused by very constricted supply in desirable cities. A coffee shop or bakery doesn’t cause it. Also, gentrification impacts minorities differently. It’s pretty great if you’re a homeowner

In some ways it has deep pre-hispanic traditions. In others, like tacos al pastor, it’s more recent fusion. It’s also a large country with deserts, mountains, and rainforests, and the food reflects the geographic diversity.
