Yesterday I put the final recipe into my new book. I find the process of creating a book exhilarating. Ideas form in my mind, I work on them over time, and in the final months I create the design, fit each part of the book into it, and see the book come to life.

How to perfectly cook steak 1. Bring meat to room temperature 2. Get the pan very hot, then put a little lard or tallow in the pan 3. Test temperature of fat by dropping a tiny bit of water in it, if it jumps up and makes a noise, the fat is hot enough. (see comment for part 2)

Local grass-fed beef steak with 100% homegrown vegetables. Green beans fermented with garlic, tomato, and oregano (stored for 6 months in the larder). Potatoes cooked in homegrown lard. Green tomato and zucchini chutney.

This is a desem sourdough starter. It’s a kneaded dough starter that thrives in cooler temperatures, and has a longer window of readiness compared to a 100% hydration starter. It gets treated a bit differently than regular starter, and makes lovely 100% whole wheat bread.

My husband finds dry fallen trees in the forest and cuts them into small pieces for our cooking stove. We don’t bring in any gas or use any electricity for cooking, just wood that he has harvested.

How to grow great carrots in any soil: Try to plant them evenly (we use a precision seeder). Water every day in dry weather until they sprout. Thin them as early as possible. Be patient. They can take a while to grow to a decent size.

Self-seeding mustard greens are feeding us when the greens we planted for winter did not go well. If you struggle to grow greens because of slugs, snails, or deer, these are a great plant to grow. Sow in spring or early autumn, let some go to seed and you’ll always have greens.
