I’ve been doing a deep dive on Appalachian foodways for the last year or so. Mexican food has progressively usurped local cuisine all over the US, but particularly in Appalachia. Americana food is becoming reserved to Cracker Barrel and an odd local joint here and there.

Since moving to TN, almost every single group get together has featured some variety of Mexican. Every work outing has been at a Mexican joint. The US, specifically the Heartland, has been losing its regional foodways at a breakneck pace. Maybe we ought to get back to our food.
