Been trying to work out how to get the very best out of the really tannic fruit like, Tremletts Bitter, that grows in some of the old orchards we foster. Hope this is how. Release date sometime in 2023

1.Keeved cider when the fying lees is floating on top of the clear juice. 2. After the clear juice has been racked off and the flying lees is left at the bottom of the tank.

The freezing temperatures we need for keeving arrived just in time at the very end of harvest. Here you can see the flying lees a few days before we racked the clear juice from underneath it.
