Also, during recessions restaurants were fall back plans for people out of jobs. During the last recession people left real estate jobs and got jobs in restaurants as FOH/bartenders. They were safe, for the most part. Now? Not at all. Why go there? No reason to.

"competitive wages" stop saying that shit. Just say what the wage is. Competitive in this industry or competitive in the world of options out there? You pay $30 for people? Congrats. If they go to a different industry they can probably get $35 and weekends off doing 9-5.
For the owners and investors and cool chefs that don't get it I offer you some advice that you have given to your workers that never accomplished anything. Work harder. Figure it out. You got this.

If you are looking for a job then go check that PPP list to see how much money they received and in the interview ask them if they received the restaurant revitalization fund as well. Guaranteed they can pay you more but they won't.
