Last year my old boss offered me equity to open up a Fachini #2 in Houston. I turned it down to become a partner of a concept that did not yet exist, but one I truly believed in. Although there was no security, I went with my gut feeling.. as it has never failed me.

The furthest my dad saw me go in my career was me learning how to become a decent cook. At the time learning how to make naturally leavened sourdough. One of the last meals I cooked for him was soft scrambled eggs with my freshly baked bread. If only you could see me now.

2016: There was literally nothing in my wallet, just a lot of dreaming. During this time my dad was in his final weeks, my mom wasn’t working bc she had to take care of him. I had to grow up really fast and step it up for them. All the odds were against me. And here I am now.

I just wanted to say real quick.. El Carlos Elegante is one of the best restaurants in the city and THE BEST modern Mexican restaurant in the city. From the food, to the service, to the ambiance. Exceptional. I’ve been 3 times already and I am still blown away. Trust me.

He should have cooked the ground beef before the peppers to get a nice layer of fond. He also should have saved some pasta water to add later on to homogenize the pasta and the ragu. He needs to also stop using Kraft Parmesan and start using Parmigiano Reggiano. Dumb kid.
