The Caribe blend is a selection of Catigua and Catuai varietals that were produced in areas with higher elevation, and all fermented using an innovative approach. Using mossto, the juice that is left over from previous fermentation batches🍷 https://t.co/Slj1EoxiCK

Kenya Natural coffees aren’t very common. Small-scale farmers depend on cooperatives to mill and trade their coffees. Co-ops seek consistency to produce the classic “Kenya” flavour profile since it guarantees consistent prices when they’re auctioned or sold directly. ☕️

Don Edgar first began experimenting with naturals and red honeys, and now attempting a more rustic approach to a carbonic maceration process. The result is a fruit bomb! Notes: Sweet raspberries and purple fruit, wine-like pinot noir, dark chocolate clean and bright finish.

Kenya grade coffees based on the bean’s screen size and density and they do not indicate cup quality. Unlike Ethiopian coffees, were a G1 relates to cup quality and less defectes, a Kenyan AA does not indicate high cup quality and an AB/C lot from a better farm may cup better.

♨️ Thermic Fermentation! ♨️ Thermic is a new experimental process involving heat. The heat helps the sugars on the coffee cherries break down letting the beans absorb the sweet, fruity and acidity flavours of the fermented pulp. 👉 https://t.co/Slj1EoxiCK 👀
