Pairings made in heaven: Soave and English chalkstream trout, which is frankly fabulous. The Soave is made by Pieropan, mostly from Garganega from a vineyard above Calvarino ('Little calvary', after its steepness). The Soave really grows on you.

Terre di Lavoro, the flagship wine of Fattoria Galardi, is something of a cult wine. Blend of Aglianico & Piedirosso from the Roccamonfina volcano in Campania. At peak now at 17 yo & perfectly fresh & balanced. If you wanted to show Aglianico, this would be an excellent choice!

This 'Alpine Chablis' was one of the best Chasselas I tasted on my wine trip to the Swiss Valais. It's made from terraced gobelet vines in schist, at the point where the valley floor turns into sheer rock. Shame it's so hard to find.
