After rewatching The Mandalorian in it’s entirety, it’s clear that something went wrong.
S2 was Din’s mission to return Grogu to a Jedi. After an intense season he finally completed his mission but the S3 premiere made S2 kind of pointless.

I think there are two ways that you can interpret this scene from Return of the Jedi but I could be wrong.
Either Vader was simply protecting his Master from Luke’s attack or Vader was protecting Luke from potentially turning to the dark side.
