(I use 1/3 cup measure so pancakes are consistent size.).Allow to cook till bubbles form on the surface, then flip. Serve warm with your favourite toppings - fruits, maple syrup & cream.

Method.Place flour, baking powder and sugar in a bowl. Combined eggs, ricotta, milk and butter, add to flour and whisk until batter is smooth. Cover and rest in the fridge overnight for the best results. Cook batter in a lightly greased non stick frying pan over medium heat.
