Once harvested, tavioka absorbs oxygen and oxidizes, resulting in black streaks and spoilage in 3-4 days. I’ve just seen wax-dipped tavioka for the first time here in a Dallas Walmart. The wax coating extends the shelf-life up to 21 days.
