I've found myself wondering a lot this last year: boy, there are so many incredible pop-ups happening in parking lots across Miami. Why don't these people have restaurants?! Lots of quotes in here that answer that question in mildly to very depressing ways!

I love Miami for many reasons, and especially for its cultural diversity. Our best restaurants celebrate that culture (whether a single one or a combination of many). But the worst ones treat it like a product.
