Serve is not about aces and speed
Power
Serve is about saving big points and winning pressure points with serve
Roger was exceptional with his serve given the situation of a match

Djokovic stayed on the tour and learnt from the loses he had against Roger and Rafa early in his career and kept improving his own game and then once Roger slowed down in terms of physicality Djokovic overpowered him of course Roger let him do so by wasting match points
