You're forgetting one thing. The movies main song "come on, come in" is catchy as hell.
“Why do people like the 2000s Fantastic Four movies all of a sudden?”. A lot of people thought they were fine, albeit dismissible, when they came out, but having legible cinematography and a snappy pace makes it look like a masterpiece compared to a lot of dull sludge out now.
