Proteome analysis and a NADH dependent reporter (luciferase) points towards NADH depletion as the as the underlying cause of this phenomenon. It also affects culturability and secondary metabolite (flavor) formation. This is relevant in #food #fermentation . 2/x.

Happy to share our latest paper where we show that manganese omission from the environment of non-growing lactococci allows them to keep on acidifying for weeks whereas in conditions with manganese acidification stops after one day. 1/x.
