🍷Tannins and Flavor: The toast level of a barrel determines which flavors it will give off. The lighter the toast, the more green, almond, and delicate flavors are prominent. The heavier the toast, the more mocha, vanilla, and almond flavors. #winemaking #oakbarrels #frenchoak.

🍷Micro-Oxygenation: When water and alcohol evaporate and oxygen is let in (small amounts), which helmature the wine. 🍷Phenol Interaction: Phenols are compounds found in grapes and oak that make up flavors, aromas, and mouthfeel (like vanillin and lactones).

There are four main ways the oak barrels impact wine:.🍷Evaporation: ~6 gallons of wine/year evaporates. When this occurs, the water and alcohol evaporate and concentrate the flavors in the wine.

One of the main ways a winemaker can influence their wines is by using oak barrels, which have been referred to as the winemaker’s “Spice Cabinet," as they can add “seasoning” to the wines.

Let's talk barrels! 🛢️🍇. We recently received a new shipment of oak barrels, which you see here lined up in our barrel room. We sourced these beauties from legendary barrel producer, François Freres Cooperage, located in the heart of the Burgundy wine region. #winemaking
