Also, do NOT throw away any white rubbery bits of fat. Toss them back in, crisp them up, call it dessert.

Dry-brining a steak is a good way to help get that tasty crust, but if you're going with a fresh steak straight from the package, make sure you use kosher salt. It really helps suck moisture and create a crispy bark.
