Did you know that Ribbon Road was manufactured by and bought from Toad's Toy Store, the same shop who's walls you ride across in the anti-gravity section of Toad Harbour
I'm sure we all know about Sunshine Airport being situated near N64 Koopa Troopa Beach, but did you know it's also near Isle Delfino, according to Nintendo Magazine?
It even has star shaped islands nearby similar to the sealife-shaped islands seen in Sunshine's opening cutscene.
Wii U Rainbow Road is actually not a Rainbow Road, but a space station belonging to the Rainbow Exploration Agency, a team of Toad astronauts who travel across outer space, presumably in search of new Rainbow Roads for racers to drive on. (1/2)
A really cool fact about Sunshine Airport is that if you stick around at the start of the track you can actually hear voiced dialogue coming from the intercoms.

Amongst the rocks and pillars surrounding the grass at the start of Thwomp Ruins are the remains of presumably dead Thwomps, half-buried in the grass and covered in moss and vegetation
On a completely different note, Cloudtop Cruise's beanstalk section starts with a giant Used ? Block, implying that this track might be a Coin Heaven and said beanstalk is a means of accessing it
Not only do thet appear in every track that takes place in space, but you can see their branding all over Wii U RR too, from the spectator seats, to the the main station itself, to even the Blooper shuttle.

The Statue of Liberty parody featuring Peach is common knowledge at this point but something I've always found funny is how on Rainbow Road 64 it's suddenly relocated to a more populated island rather then standing by itself on a small piece of land. Just a lil oversight probably
The Shy Guys seen mining for crystals and gold in Shy Guy Falls and Wario's Goldmine are supposedly part of a company known as Shy Guy Metals.
Said company was supposedly founded in 1987, referencing the year that Doki Doki Panic, Shy Guy's debut game, was first released.
The expedition appears to take place between 2014 and 2015, clearly referencing the time between the release of MK8U and the release of this course as a DLC track
You can also see the ice caps melting over the course of the race as a result of the Toads' actions

It's highly likely that the Electrodrome is owned and/or run by the Koopalings. Not only is Larry the DJ and Roy the provider for sound equipment, but the whole group is also shown racing on the track together in the credits (too lazy to get a higher quality screenshot lmao)
Finishing off with a gameplay-related detail, in any track that has an MKTV broadcasting truck present in it, if you drive close enough to it, the Toad filming the race will actually start following your movements so his camera is always facing the screen.
Speaking of years, Ice Ice Outpoast takes place during a year long polar expedition involving Toads seemingly drilling for oil, complete with cargo boats, tents and supplies, and numerous digging tools provided by Morton's Construction company
Another nod to the game taking place in the year 2014 is in the fact that the Submarine Coaster ride that Water Park is themed around is advertised across the game as a new attraction; the new model currently used was created in 2014, according to one of the Water Park posters.
One of my favourite things about fighting games is when community dubbed moves completely take over the actual names for the moves.
The move mashed in the infinite is called "Berserker Rage" but you will not find a person on this planet who calls it that. It is "Swiss Cheese".

Fun fact, if you stand on top of Peach's Castle in Mario Odyssey and look into the distance of the Mushroom Kingdom, you can see a desert, icy tundra, mountain range, dense forest and large body of water, representing the Worlds that Mario usually travels through in the 2D games

Not sure if this is true but I heard that the lore behind this stage is that you're returning to 1-1 after playing it as a child all those years ago, and it looks like this due to being abandoned.
Though 1-1 is used surprisingly often in Mario games which kinda defeats the point
