Today is absolutely terrible on so many levels. If any of my good people are over on that other site, I’ll start to be over there rather than here. And y’know, I’ll actually try to be active again.

Had to cook a proper meal for the first voyage of this lovely (if i say so myself) pasta dish that I made. * Fresh Campanelle.* Cambozola Triple Cream sauce.* Charred then Carmelized Balsamic Red Onions .* Seared Balsamic Crimini . Legitimately turned out AMAZING

A lovely heaping bowl of Carbonara perfection. Plus a great bottle of wine. Was a wonderful last dinner to cap off our cabin trip. Guanciale + Pecorino Romano + Egg Yolk + Tagliatelle (usually use Bucatini but they were fresh out) + Pasta Water + S&P = Carbonara deliciousness

12 hours later, Tonkotsu Ramen Broth is a success (I think, final judgement to come). Now the Dashi and Tare. Then tonight we Ramen!

On the bright side was still able to make it to our cabin we were heading out to. Thanks to my mom and stepdad saving the day. Now trying to relax and have been making a Pork Tonkotsu Broth for the last 5 hours and going another 5+ so looking forward to that.

Yesterday was my first day of vacation. Started out no more than 45 seconds on the road before being rammed head on by an uninsured driver while I was stopped at an intersection. Completely totaling their car & mine being iffy. Rocking some soreness but thankfully we are fine.
