Rest the meat. Let it sit for a minimum of 30 minutes in order to allow the juices to redistribute and reabsorb into the meat. If you cut it too soon, the juices will escape and the meat will dry out.

Internal temperature is everything. Invest in a meat thermometer. Poke the thickest part of the meat. For brisket: ◦ 150-155°F is medium ◦ 160°F is medium-well ◦ >160°F is well done
