A very good example as to why brisket sold at BBQ joints is much more than the raw price. Add in wood, seasoning, many hours of labor, and the real estate costs.

Last thing I expected to see in Seward, Alaska is a Texas BBQ joint. Transplanted former firefighter from Texas serving brisket, ribs, and more cooked on small pits including use of mesquite chunks. Robert Earl Keen and Willy Nelson playing on the radio and Shiner Bock for sale!

They don't do social media and don't take credit cards at Kolacny BBQ House. Ervin doesn't talk much but his wife Carolyn will chat while she rings you up. Saturdays and Sundays they open at 11 but get there before noon for one of the most unique experiences in Texas BBQ.

Too bad you can't smell this experiment. Buckboard bacon steaks. Pork steaks in a 10 day dry brine including maple syrup, then grilled up. This is gonna be righteous on a waffle. if I don't eat all of them tonight
